This recipe is the simplest, most delicious meal you can make. I often have it for lunch, especially in summer. It takes all of about 5 minutes to put together, tastes amazingly fresh and yummy, and is really, really nutritious too!

Avocados are amazingly good for you! Full of healthy monounsaturated fats such as oleic acid, as well as Vitamins B, E, C and K, potassium, fibre and phytonutrients. They’re not called “nature’s butter” for nothing… They do wonders for your skin and hair – and if Nigella Lawson is anything to go by, they do wonders for the ageing process too!


Serves 1 or 2 people.

You will need:

1 RIPE avocado (try to get Hass Avocados, they are the creamiest – I find that greengrocers like Fallon & Byrne tend to sell the best ones)

1 lemon or lime

flaky sea salt

dried chilli flakes or fresh chilli

good quality sourdough (my favourite is from Tartine bakery but this time I used bread from the Firehouse Bakery)

1 clove of garlic


Slice your sourdough bread and toast it to your liking.

Cut the avocado in half with a sharp knife. Using a spoon or a fork, scoop out the flesh of the avocado into a small bowl.


I find that half an avocado is plenty for one person. If you leave the stone in the remaining half and cover it and keep it in the fridge, it will stay fresh for a day or two.


Mash the avocado up with a fork into chunks, but be careful not smash it completely.


Cut your lemon or lime in half.


Squeeze the juice of half the lemon or lime over the mashed avocado and fork through.



Cut the clove of garlic in half. Leave the skin on.


When the toast is ready, rub the cut side of the garlic clove all over one side of the hot toast.


Spread the smashed avocado onto the toast.


And sprinkle with flaky sea salt:
